Weekly Menu Plan 1/6/13 – 1/12/13

Here’s our gluten free weekly menu plan.

Sunday – Braised Chicken with Lemon and Capers and Green Beans with Almonds. Last summer I made green beans at least ten different ways, and this was the only recipe I liked. I think it’s the mustard?

Monday – Corn Tortilla Crusted Chicken Tenders, corn & edamame. These were SO good! Both girls helped make them, which always adds to the fun. The only problem was that my first batch were excellent, fried crisp, the breading stayed on. The second batch? Not so much. My guess is because the corn tortilla breading had gotten wet and wasn’t sticking as well. Next time I’ll make two batches of the breading, so the second batch stays dry.

Tuesday – Hamburgers and sweet potato fries

Wednesday – Hard shell tacos

Thursday – Yogurt Parfaits

Friday – Leftovers

Saturday – Bacon Wrapped Chicken Thighs
